Kale and Parsnips


1 cup sliced onions

1 cup halved and sliced parsnips

1 tbl oil

1 cup water

2 tbl ginger, minced

1 bunch Kale, veins removed and cut into bite sized pieces.


1. Sauté the onion and parsnip in oil for about 5 min. ,stirring occasionally to prevent burning. Add the water and ginger. cover and simmer for 4 or 5 min.

2. Add the kale and continue cooking 4 or 5 min longer. Stir occadionally but otherwise keep the saucepan covered.
