8 medium organic golden beets
2 cups of organic chopped beet greens, washed and dried
1-2 tablespoons of olive oil
1 clove garlic, minced
1/4 cup of feta cheese
Steam beets for about 30-40 minutes. Peel, quarter and set aside. In a skillet, heat oil over medium-high heat. Cook garlic until fragrant. Stir in beet greens and cook stirring often, until tender, about 3 minutes. Add in reserved beets and cook until heated through. Sprinkle on feta cheese. Serve warm or at room temperature. Enjoy.
